Taste them as well, to make a selection based on their gustative qualities. The fungus responsible for this fermentation (<\/span><i style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, 'Helvetica Neue', Arial, 'Noto Sans', sans-serif, 'Apple Color Emoji', 'Segoe UI Emoji', 'Segoe UI Symbol', 'Noto Color Emoji';\">Geotrichum Candidum<\/i><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, 'Helvetica Neue', Arial, 'Noto Sans', sans-serif, 'Apple Color Emoji', 'Segoe UI Emoji', 'Segoe UI Symbol', 'Noto Color Emoji';\">) will destroy the gelatin and eliminate any germs present on the seed.<\/span><\/p>\n<\/div>\n<ol>\n<li>Cut the tomato in half, cross-wise.<\/li>\n<li>Using the tip of a knife, squeeze the juice and seeds into a glass, bowl or jar. Label the container.<\/li>\n<li>Si la vari\u00e9t\u00e9 n\u2019est pas tr\u00e8s juteuse : ajoutez \u2153 d\u2019eau pour \u2154 de jus et de graines.<\/li>\n<li>Cover with gauze or muslin, fastened with a rubber band to keep midges at bay.<\/li>\n<li>Allow fermentation to take effect, placing the container at room temperature and out of direct sunlight. Depending on weather conditions, a layer of mould will form on the surface within one to three days.<\/li>\n<li>As soon as the layer of mould appears, pour the seeds into the colander and rinse thoroughly with water.<\/li>\n<li><span style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Spread the clean seeds out on a cloth, some unbleached greaseproof paper or a plate and leave to dry for several days in a dry, airy place out of the sun. Store them in paper sleeves, writing the name of the variety and the month and year of harvest. Note that tomato seeds have an <\/span>average germination period of four to six years<span style=\"font-weight: 400;\"> and their germination rate declines from year to year.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">To preserve their germinative power, store them in a <\/span>cool, dry, dark place<span style=\"font-weight: 400;\">at a constant temperature. The ideal temperature for storing seeds is around 4-5\u00b0C, so you can put them in the fridge or even the freezer.
